Mini Vacation (Part 2)

After a late night Friday night (3:30 AM) and ice on one of the guys ankles.  Yea...he was that guy that fell down the stairs outside and noone else was out there to see it and help him.  We all claimed a bed and settled in for a few hours of sleep.

Saturday started nice and slow, getting ready, eating some breakfast and drinking the necessary amounts of red beer to get of the slight headaches from the massive amounts of alcohol consumed the previous night.

We spent Saturday at the horses races, now I've been to the horse races all over the state of NM...and while I enjoy a day at the races no matter what, this was amazing.  Our friends have a box and rented a second one for all of us to fit and we had a blast.  Drinking a few beers and betting on the ponies!!!  Best way to spend a Saturday.

After the races we headed back to our cabin with a few extra friends in tow to eat some dinner.  Now us girls that went on this trip know how to plan food, and there was no way anyone was going to starve.  Saturday night we planned for thick cut Ribeyes, grilled shrimp tossed in brown sugar and red chili flakes, baked potatoes, shrimp cocktail, jalepeno poppers, and rolls. And we ate and ate and ate and still had tons of leftovers!!!

We then of course enjoyed some beverages and a dip in the hot tub and 3:30 AM leftovers.  Who doesn't want leftover steak and baked potatoes in the middle of the night??

Sunday morning we all managed to sleep in until 9:30 and finally rolled out of bed and cooked some breakfast.  Eggs, bacon, fried potatoes, green chili, salsa, and toast!  Oh!!!  And bloody marys!  We spent the entire day Sunday at the cabin.  We sat around the bar and drank and relaxed and laughed like never before.  We of course spent sometime in the hot tub and more time we cooked.

The boys decided to try on the girls blingy flip flops...

And a deer graced us with it's presence and spent the entire evening about 5' from our deck!

Sunday nights menu consisted of pork chops with a brown sugar crust, more jalepeno poppers (we put shrimp in them this time), hashbrown casserole, frito salad, salsa, south Georgia cavier...the works.  Frito salad is a family "recipe" that I've introduced to all of my friends and the are totally in love and ask for it at most get togethers.  The hashbrown casserole became a quick favorite as well.

Of course after dinner was more hot tub time and we all turned in by midnight.
